I don't know about the other one, but I like Jet/Zuko because it could never work out well in the end for both of them. Zuko has his duty to the Fire Nation, and, with his personality, he cannot place love (or lust, whatever) above that. He has to marry a woman (most likely Fire Nation, possible symbolic unity of a mixed-nation marriage aside) and produce heirs. Simple as that.

Jet, on the other hand, would likely never get over the fact that he was banging a fire nation dude, and even if he did, he would never stay in the Fire Nation because of past history and because he probably couldn't stand to stay in one place for terribly long (particularly when the war/fighting is over). Also, I doubt he would settle for being some sort of dirty little secret for the new Fire Lord. This, of course, is all assuming that Jet lived, which he probably didn't. I like to think that, whatever the case, Zuko was very happy and very much in love with Mai afterward.

But I don't know, I kind of like the tragedy of it all and think that some thought goes into it if you actually ship it and not just "lol hey, two guys fucking," which is what you're implying the ship to be entirely about. :/
