Most of them are set to 6 films, actually. They just signed Ruffalo on for the same. I believe RDJ negotiated his down to 4 (or they may have counted cameos?), but really only because his gigantic name got him a lot of control (and is also why he made something like 50mil off Avengers).

I hear Evans was really not into signing away possibly the next 10 years of his life no matter how much they sweetened the pot, so I'm not sure how many he was signed on for in the end.

As for the X-Men and Spider-man franchises, unfortunately, Marvel was really crap in regards to their rights, and other people own them. This is why we're getting a too-soon Spider-man reboot-- Sony's rights were going to expire if they didn't use them within a certain time frame. I live in hope of the day they CAN get them all together, by buying them out or companies returning them (Spider-Man's future is a double-edge sword. If it's crap, they'll give up. If it's good... and I want it to be good despite myself, sigh), but that's probably a long way off from ever happening.

tl;dr: It will probably be 2053 before they get their shit together anyway.

Sony is saying now that they're willing to consider possibly letting Spidey into the Avengers, though (and I mean, when a movie banks a billion bucks in a couple weeks, no surprises there!)
