There are like 85 books on that list, any tips which ones have the more sympathetic depictions?

I'm trying to remember characterisation, of the ones I've read most were ages ago in a Norse Myth binge...

but definitely try

Runemarks/Runelight(YA, by Joanne Harris)
Eight Days of Luke (pre-YA, by Diana Wynne Jones)

Both very readable to adults. Loki is central to these stories, and likeable (even with a huge streak of darkness). OP would have a conniption. But Thor has red hair at least, IIRC!
