Mulan is chinese - and well. As someone already stated, women in developed countries tend to have heavier periods, so she probably had a lighter period, and I imagine that she simply avoided going to the bathroom and bathing around men. As long as she wasn't missing her turn at patrols, or sentry duty, I doubt that the officers really paid that much attention to what she did when she was 'off duty' as long as she wasn't causing trouble - and people wouldn't exactly be examining her to see if she was a guy. They'd just expect that she was, so if she behaved a little oddly from time to time, they probably chalked it up to her being weird, not wondering if she was secretly a woman.
