You're the resident Gundam fan right.

I'm interested in getting into the series, where should I start?

Only Mecha anime I've watched up to this point have been Evangelion and Code Geass, both of which I enjoyed.

(also open to anyone else who wants to answer I suppose)

It depends on how you want to get into it. Do you want to watch all of them or just a couple? If the former, I'd say you start from the beginning with the original Mobile Suit Gundam and go in production order. The timeline with the most series is Universal Century, which could be called the "canon" timeline and it's the one to which the original belongs. Other than that, there's a bunch of AUs not connected to UC, so if you want to see if the franchise is for you you could check one of those out first.
In my opinion, the real meat of Gundam is in UC, but it can be really time consuming, seeing as the main story is three series and one movie, aside from some OVAs/movies/one other series that's not really connected to the rest. As for AUs, the ones I've enjoyed the most are G, X and Turn A (this one is my favorite of the TV series, but it's usually recommended that you leave it for last, for spoilery reasons).

If you're going to watch all the Gundam series, start at the beginning.

In the mean time, here are some other mecha series you might be interested in
a) Dai-Guard - giant robots seen in a different light
b) Tengen Toppa Gurren Lagann - because it's pure awesomesauce

I've actually watched GL.

It had some really good peaks, but man was the quality variable - and the mech designs were the dumbest thing.

Yes.

It's not that I didn't like GL, it had some great parts. Like the first episode after the time skip? Dang mang. And Kamina and Simone were a breath of fresh air.

Then you get things like episode four.

It was a really good, and subpar anime as one.

Pfft don't watch Gurren Lagann, watch GUNBUSTER (especially if you watched Evangelion and really liked it)

Also I would strongly recommend watching the original Macross series since it's actually my favorite mecha series over Gundam (gasp!) though I prefer the Gundam fandom since Macross (and not Robotech) has a pretty inactive fandom in North America... or at least I never run into people talking about it very much

Oh man I'm sorry it took me so long to reply to this, hope you see it (I'm on vacation so I haven't been near a computer in a long time)

If you're talking UC, I would start with the original Gundam movie trilogy first (0079). Then I would watch 0080: War in the Pocket because it's six episodes, and you really don't need to know much about Gundam to enjoy it (the events happen during the events in the original Gundam). Then, if you think you're into it, I'd watch Zeta. A lot of people recommend this one first, but you really need to know the characters and events of the original series to appreciate this one (or know what's going on really.) After that, I would recommend ZZ even though it's ~controversial~ because it's sort of tongue-in-cheek and doesn't take itself seriously (but neither does 0079, really), I mean, it is the continuation of the series.

Char's Counterattack isn't that great but it's just a movie, and it also has some good animation and mechanical design (Gainax worked on it too).

Gundam Unicorn is currently being released and it continues after the events of CCA. Only a few characters from earlier UC installments appear and it's mostly new characters. The story is kinda "eh" but it's still decent to watch.

I never thought Gundam 0083 or Gundam 08th MS Team were that great in the story/characters department (they both had a few characters I really liked but overall neither one was strong on plot). 0083 is basically "Top Gundam" but the the battle sequences have some of the most beautiful animation I have ever seen in anime, especially considering that all the mecha was hand-drawn without the aid of computers in 1989. It's just.. beautiful to watch if you enjoy that aspect
