Can anyone rec any anime that's in a similar vein to Ghost Hound?

Basically: slow build-up, atmospheric, possibly slice of life.

I haven't seen Ghost Hound, but Durarara!! is an anime that matches the description you gave, and I loved it.

Mouryou no Hako! Intelligent and incredibly atmospheric (in a slightly menacing way). Wouldn't call it slice-of-life, though.

Alternatively, Mushishi. Slow-paced, gorgeous and atmospheric, more episodic than slice-of-life but often described as such.
