Because spelling it "Jaime" makes it look like it should be pronounced either "Hi-may" or "Jame", the latter of which is how I thought it was pronounced until the TV series came out... it definitely does not look like it should be pronounced "Jay-mee".

I never noticed until right now that I've just be reading it/saying it as if it was Jaimie.

That IS an odd way of spelling and pronunciation, the canon way.
