Some ground rules:

Depends really. If I'm watching something alone, I tend to give up after the first three or four eps if I'm not into it, but I need to get a feel for characters first. It's difficult to judge them from a pilot.

If I'm watching with other people or a friend recommended it to me, I'll stick with it a bit longer. They tend to give me reasons that are relevant to my interests which will make me stick around. Vampire Diaries for example took me a good eight or so episodes to get into, because it was such formulaic teen drama to start with. (My friend goes "just wait til you meet the new history teacher, if you're not in love within 30 seconds, I'll admit defeat". I was hooked before he even turned up, damn her). And backing up my earlier point about it being difficult to judge characters from a pilot, I hated Caroline at first, now she's my favourite character in the show.
