There's a difference between bad acting and believing that an actor has changed the writers' intent through his acting. While you could say Kirsten Dunst destroyed Mary-Jane's character, you couldn't say Leonardo Dicaprio destroyed Arthur Cobb's, because you have no basis for the character outside the actor. Similarly, Jared Padalecki's Sam Winchester is the only basis for the character's personality.

Besides, Sam's personality makes sense in the context of the show: he's the smarter, beloved younger brother. He's been doted on and given chances Dean didn't have. He's been obsessed with the idea of a "normal" life for years and was very unhappy to be thrust back into hunting. He has supernatural abilities that allow him to live up to his system of ethics and he's been fundamental to the Apocalypse. Dean still fucking adores him after everything they've been through.

I'm sorry, but there aren't many people who wouldn't be spoiled and self-centered after that.

I'm not actually arguing Jared Padalecki subverted the writer's intent here. I'm just saying if he did I would think it would be noticeable.
