I can't speak for anyone else, but for me a large part of it is that I've been a huge animation geek ever since I was little, and I really like the character designs and the specific style of animation of the movie.
Other points in the movie's favor are that the main characters (Chel included) and their banter are very entertaining, as are some of the songs.

To this day I'm not sure whether or not I like the fact that Chel and Tulio got involved, but I did like that the tone their relationship has is different from the standard children's movie "power of love" stuff, even if it's pretty run-of-the-mill when compared to movies aimed at older audiences.

In fairness, their relationship ended up getting tossed in there because the higher ups didn't like the [intently strongly implied] homosexual relationship between Tulio and Miguel. So it does kind of come out of no where. [Not that I don't love Chel, or that I don't like their dynamic.]
