There are lots of ways to make breast so it's not dry. Poaching is probably the best method for this (although it works best if you're then going to use it in a salad or something, poached breast is better once it's cooled). My favorite method, though, has more fat than skinless breast but less fat than chicken thighs: buy the breasts skin-on, pan-fry them with the skin side down for about a minute, and then pop them in the oven. The fat from the skin goes down into the meat and it becomes moist and delicious.

Soup. The only thing white meat chicken is good in, is old-fashioned, plenty-of-onions chicken soup.
