tin of tuna
can of chopped tomatoes
Handful black olives (optional) cut up
Black pepper
Pasta
1) (optional) Cut onion into small pieces. Put a little oil (just to grease bottom) into a saucepan. Heat saucepan on hob for a minute, then tip in onion. Turn heat right down and leave onion, occasionally stirring, for a good few minutes until all the bits look translucent. Then turn heat up, stirring every so often, and keep going until onion is brown. There are videos on Youtube.
2) Tip tin tomatoes and drained tuna into saucepan, heat up and stir, let it simmer for a bit so that it reduces in volume a little. Add olives and season with pepper.
3) Meanwhile, cook pasta.
4) Put portion of pasta in bowl, add half tuna/tomato mix. Makes two portions, so you can stick the rest of the sauce in a bowl or box in the fridge for tomorrow's meal.
The onion, while optional, is a useful skill. If you can practice peeling, chopping, and cooking onion, you'll find it's useful for all sorts of dishes. And once you've got used to it, and to taking time to let the onion get translucent on a low heat and then let it go to caramelised, it's a really easy way to add umami flavours and sweetness.
