Recipe Thread

Ingredients:
1 potato, diced
1 chicken breast, diced
1/2 an onion, diced
Extra Virgin Olive Oil
Rosemary*
Thyme*
Oregano*
(*Or other herbages that you like)
S&P
Preheat oven to 350F. In a baking dish, add potatoes and onions. Drizzle with EVOO and add herbs and S&P. Layer chicken on top, drizzle with EVOO, and add herbs and S&P.
Cover with foil and bake until potatoes are tender (about half an hour).

ingredients:
-2-3 potatoes
-~3 tbsp cooking oil (i use olive oil)
wash, peel, and grate the potatoes. after you've finished grating, squeeze as much moisture out as you can. if you've got a potato ricer, this will make your job easier (dont force the potatoes through the ricer, just squeeze out the moisture). if not, just use paper towels.
heat up about 3 tbsp of oil in a large pan on medium-high heat. even if you're using a nonstick surface, the oil adds some good flavour in my experience. when the oil starts shimmering, put in your grated potatoes. spread them out evenly so that they're not more than half an inch thick in any given area. you can add salt and pepper during cooking if you want to. cook the bottom until it's golden brown, then flip. if you want to make flipping easier, divide the potato cake up into quarters and flip each portion individually. cook the other side until golden brown. make sure not to undercook, otherwise they'll be really mushy and underwhelming.
usually takes about 15-20 minutes from start to finish.
