This, mostly.

When it comes to phonically doing accents, as often as not even it's something that has a fairly standard spelling ['Ah' instead of 'I' for a southern accent for example] then even if the reader spells it out, it's probably not going to actually sound like what the accent sounds like, for various reasons.

It's also something that even most of the pro writers can't pull off.
