i'm curious how GF is going to keep in the 'Summer vacation' aspect, will they keep that going for a second season or try something different or what? Plus these parents that never ever seem to call to check on the kids they left at their crazy uncle's place.

As far as I know, the first three seasons will be about the first summer.

Phineas and Ferb has all been alluded to taking place all through the same summer, except for two episodes set during Halloween and Christmas Vacation. GF will probably just do what they did; lampshade it.

true, true, they have kind of already with 'Summerween' as an excuse for a Halloween episode, I'm sure the residents of Gravity Falls will be celebrating Christmas in July soon as well.

Mostly I'm just sad because I'd like to have the characters actually grow up instead of being like Bart Simpson, you know?

Where did you hear that? I'm just curious. After reading the description here I feel like all of season 1 will be about their first summer. Personally I'd love it if each season progressed to the next summer :)

Also, itunes says "Vol 2" but I'm pretty sure the show is still in season 1.

Good question! I haven't heard a definitive number. Maybe someone else might know, I'm wondering now too!

Disney releases volumes that don't usually correspond with seasons; they just start a new one whenever they think they've given you enough episodes to buy another season pass. PnF is at the end of season 3 and has like, 8 volumes.

I swear, I read something about 3 seasons being greenlit, with each season taking place in a subsequent summer, but I cannot find any reference to it now. I thought it was on Alex Hirsch's Twitter, but I can't find it.
