Question to someone who has experienced both:

a) American pudding

b) British Angel Delight

and ideally

c) Blancmange

Is American pudding the same as Angel Delight, or is it more like blancmange, or can it be both? Texture is the main difference between the two.

I can't say I've had either - but from what I've heard over the years Angel Delight is more like mousse where as Blancemange is more like [American] vanilla pudding.

Ah. I am eating chocolate blancmange right now, so I assume this is like the chocolate pudding Americans eat from little cups?

It's similar at least, I can't speak for exactly how different it is though, so I'd take that assumption with a grain of salt just in case what I've heard is off.

Not all American pudding comes in cups, we also have instant and the kind you cook from boxes, as well as legit homemade. Is your blancmange homemade? What's the recipe? That would be a good indicator of what it's most similar to.

I bought powder to make blancmange, which came in sachets in a box. It's basically corn flour/starch with colour and flavouring, and you mix it with milk and simmer it for a minute in a saucepan, then leave it to cool and set in a bowl or mould.

Whereas Angel Delight you just whisk into cold milk and it sets in a couple of minutes.

Interesting, preparing blancmange sounds like the way to make pudding from a box and Angel Delight sounds like instant pudding, but they're too similar to each other to differentiate.

...on whether you're making the pudding from scratch or from a mix. An American cookbook would probably have a blancmange recipe but would call it cornstarch pudding--just milk, sugar, cornstarch, and a flavoring like vanilla extract. American-style vanilla pudding (homemade) usually has eggs in it, making it more rich and custardy--whereas blancmange is more delicate and was supposed to be suitable for invalids whose digestion might be upset by over-rich food. (Blancmange reminds many of us--including Marion Cunningham, who edited all the recent editions of the Fannie Farmer Cookbook--of Little Women, because the girls take blancmange to Laurie when he's ill.)

On the other hand, Angel Delight sounds similar to Jell-O Instant Pudding--it's a powder to which you just add milk, stir, and chill. (Jell-O has a version you cook, too.) To make everything more confusing, the ingredients in both are sugar, modified food starch (i.e., cornstarch) and flavoring; you add milk. So both are basically variants of blancmange.
