I think people of all ages do whatever their interests and talents lead them to do. I like to write. I liked to write when I was 16 (not fanfic, though - it was pre-internet and I barely knew such a thing existed) and I still like to write that now that I'm in my 40s. I imagine the same is probably true of artists and cosplayers and vidders and con organizers, and also people branch out into different things as they spend more time in fandom and learn more about how things work and the creative opportunities available. I'd love to volunteer on a con committee or serve on a panel someday!
