6) I'm a hardcore (and very rare) EdxWinry fan... so maybe this is biased, but... I kinda saw that pairing coming a mile away in manga canon. Anime canon is a whole different ballgame, of course.

No, I saw the EdxWin coming in the manga. Anime canon is definitely it's own ballgame... you can sort of ship anyone together.

and I do support EdxWin, I just prefer Elricest.

Understandable. I respect all pairings in all fandoms, even those that make me twitch. I just often wonder about some people (not you) who are like 'OMG EDXWINRY IS CANON!?!?'.
