Some of what you say with I agree with and some I don't.

I agree she can be written OOC. Especially about the stuff you mention in the second to last paragraph.

But I don't know if I would call it character bashing.

As for the understanding bit, I think, for me, it depends on how they shape it. If they say use understanding to mean, "awesome as friends but don't work as a couple," then I'm okay. If they use understanding to mean, "Actually doesn't understand his quirks and can't deal with him," then I'm with you. That's stupid.

Ahaha, I'm a multishipper too. Um, have you read any of the Tony time travel fics?

Yeah, I have no problem with Pepper and Tony breaking up because they don't work out as a couple (I ship Tony/a lot of people other than Pepper, plus Tony and Pepper's relationship is like 70% just plain friendship at least), but the fics that frame it as "oh noes Pepper doesn't understand Tony but Steve somehow does" and then depicts him as treating Tony like a spoiled kid and basically being a magical telepathic bastion of illogical perfection because he's automatically perfect and pure and superior to everyone piss me off big time.

Time travel, eh? Gonna check that out. You mean Tony going back to the '40s?
