Anger isn't the only canon reason for Bruce hulking out. Increased adrenal levels or an accelerated heart rate have also been given as reasons. And it's made clear Edward Norton's Banner abstains from sex to avoid hulking out but I can't remember if that's just a preventive measure or if he's sure it results in the Hulk coming out.
