One episode really isn't enough to form a solid, definite opinion of an entire series.

It is if it's the first episode. Those are pretty much made to "sell" the show, and if they can't sell it to you with that, then why keep watching it?

Because sometimes they really haven't gotten everything put together in the first episode and things get better as the show progresses? (spoilers: they do.)

Not really, though? Pilot episodes are generally pretty weak, since most series are still pulling themselves together at that point. It's generally a good idea to watch more than the pilot if you want a better feel for a series as a whole. That being said, there are some series that the pilot was so terrible I couldn't bring myself to watch more; but I also don't comment on the quality of those series like just watching the pilot makes me an authority on them.
