The only canon immortal/mortal pairings in LotR are the ones that pair a human and an elf. Beren and Luthien, Tuor and Idril, Aragorn and Arwen. All of them had one half of the pairing having to choose their eternal fate, and more often than not (well, 2 out of 3) it's the elf choosing to die an eternal (human) death.
