I don't know about the movie, but have a MASSIVE FREAKING SPOILER for the book:

Zombies are a product of human hatred or sin or something (it's pretty heavily allegorical, and never fully explained.) When R kisses Julie, the force of their love turns them both into "pure" zombies embodying the best of humanity.
