Because it flips the pairing switch. You can't get a much more interesting side pairing than coworker assassin secret agents who are convinced they're too screwed up and too bad of a risk for anything then end up together anyway. (That's the majority of Clint/Coulson, anyway.) Also, it's a pretty solid ship if you want:

a) a relateable environment (coworkers, and nobody really fact checks your secret agent shenanigans. Also, although a lot of people can't relate to superheroes, most of us have had a crush on that guy/girl at work)

b) some pretty extreme h/c (getting shot is actually a believable thing)

c) self-esteem issues (while they might be attractive to some of us, they're both clearly Hollywood-ugly)

d) common plot tropes (unrequited pretend boyfriends? Check.)

e) banter (why the hell not)

It's really easy to ship, is what I'm saying.

Pretty much all of this.

Honestly, there's something fun, if a bit repetitive, about the tropes that Clint/Coulson tends to fall into, especially given we have no actual canon to base their relationships on, but after getting into the pairing, the whole trust/self esteem issues apparently works for me...

But really, I came into it because I really love the idea of hardcore awesome secret agents/assassins in love, and the very best of the Clint/Coulson fic is the kind that makes their jobs as much a part of their story as their relationship. Thrilling and romantic.

Plus, if Natasha gets worked in there as Clint's Platonic Life Partner, I am all up in that, because there are few things I love as much as Guy/Gal BFFs.

There's definitely the appeal of getting to work out your own backstory stuff since there's literally nothing to tie the two of them together aside from like... three lines of dialog in Thor. So, there is a ton and a half of wiggle room (especially if you aren't part of the C/C hivemind).

Also there's a heavy dose of Any Two White Guys and pair the spares going on there too.

I don't really see pair the spares, actually. I mean, canon-wise, there's Thor/Jane and Tony/Pepper. That still leaves four Avengers, so you'd really have to be pairing-happy to end up needing to pull in other characters. Usually when I see pair the spares, it's either Bruce/Natasha or Thor/Steve or something.

Okay, but Clint/Coulson came out of Thor, not the Avengers. You still had the Tony/Pepper (or Tony/Steve depending on your pre-Cap preferences), Thor/Jane, Darcy/whichever Asgardian you ship her with... which left the (at that point) supposed future Avenger and his handler.
