Baking
So this totally isn't a waste of a comment, I'm making lamingtons (basically, cubes of sponge cake in chocolate icing and coated in coconut) for my grandmother's belated Christmas present (I had a cold at the time and would rather not pass that on to an eighty-six-year-old).
What's your favourite baked good to make, GC? Or, if you don't bake, to eat?
(I make a mean chocolate chip cookie!)

uh, pizza? does pizza count?
also good on you for avoiding passing on your cold; that is very thoughtful of you and I wish more people would have the same priorities

I love experimenting with different ingredients and flavor combos in muffins. And, I like to then put two muffins per package and freeze them all, so then I can take out one pack in the evening and have it ready for breakfast. Handy breakfast, keeps longer, and keeps me from eating all the delicious delicious muffins all at once.
My favorite so far are Lemon-Raspberry muffins. Mmm. If I had lemon extract I'd be baking those right now.

Re: Baking
Plain oatmeal cookies are good, especially since I started substituting half a banana for the egg (makes it vegan, too, unless you add in something that isn't) and maple syrup for the vanilla extract in the generic recipe I had. But then I just start throwing stuff in there... Cherry almond was a good combo, as was white chocolate and pecan, and dark chocolate cranberry, and my girlfriend made orange dark chocolate ginger once... I just sort of look through the baking stuff and dried fruit and whatnot that we have on hand and ask myself what sounds good. Right now I've got some pumpkin seeds, and I'm thinking of putting them in with some cinnamon and nutmeg and similar "pumpkin pie spice" type stuff, and maybe some dark chocolate chunks. Someday I'm just going to throw in every fruit, nut, seed, and chip imaginable. ;)

-banana cream pie
-chocolate chip cookies (swapping out the chocolate chips for red-and-green M&Ms)
-peppermint meringue kisses
-gingerbread marshmallows
-spiced hot-chocolate-on-a-stick (to stir into hot milk)
I enjoy experimenting with new recipes and types of baked goods, though lately the thing we've been having the most fun with is the waffle iron I got for Christmas. There's something awesome about being able to make a batch of cinnamon waffles and freeze them to enjoy over the next
few daysday and a half.Typically, I bake cookies, brownies, cake, bread, the occasional pie (made my first from-scratch pumpkin puree this year) or cheesecake, and I have a good banana bread/muffin recipe. I keep telling myself that one of these days, I'm going to acquire enough skill with photography to start a baking blog.
Re: Baking
We had some friends over to watch The Linguini Incident on Thursday, and I ended up making a Mush Cake from the Fannie Farmer cookbook (alas, all the recipes I can find online seem to start with a cake mix; this one starts with oatmeal) with a broiled coconut & brown sugar topping. I think that's going to become part of the regular repertoire; it was remarkably tasty and I really liked the way the topping came out.
I do bread on a regular basis, but I have a bread machine, so that doesn't really count - it's just a matter of dumping in ingredients in the right order and then scraping down the sides of the pan if stuff gets stuck during mixing.
