The Blades will at one point discover Paarthurnax's identity, and insist that you must kill him. If you decide not to kill him, the Blades won't help you anymore, but on the other hand, the Greybeards won't be pissed and will still give you locations to word walls. Also, you get a nice cut scene after you're done with the main quest. There's not a whole lot off hassle if you want to keep him alive, just don't start throwing firebolts at him, I guess.

Season Unending is what triggers the quest for me, but if you've played the Civil War quest before finishing the main quest, yeah, I have no idea when the quest for killing Paarthurnax appears.

I finished the Civil War quest well beforehand, and the Paarthurnax quest triggered when I went to go see Delphine for something or other instead.

If you use Esbern as your Odahviing-location-guide, he eventually brings it up before you go to fight everybody's favorite red dragon.
