I feel like fanfic and original work stretch different skills (with the caveat, in both cases, so long as they're being done well). 'Good fic' imo usually involves metacommentary and at least SOMETHING of the writer's own original contributions/perspectives on the work. It takes a lot of insight, imo. What you're doing is using the material of the canon to communicate something to other people, something that's worth communicating and which is fitting for the material chosen.

I think you're wrong about soul-crushingness, fwiw. One's own creative vision is a subjective matter, whereas someone who thinks you got some Buffy character wrong is going to have an itemised list of reasons why. I have seen fics ragedeleted due to such politely detailed lists.

I write mostly fanfic, but also original fiction sometimes - this seems to be something I have in common with most of the fanfic writers I know. (Not quite true - I know several who do mostly original work with a bit of fic on the side for fun). When I write OF I often find some of my skills are 'unbalanced'; I'm genuinely not that good at structuring, and even in fandom I don't write longfics, so my best 'original fiction' has been nonfiction or fictionalised real-life stuff. (Really why would you make up a place when you can set things in London instead. Why.) Sometimes I feel like the only way fandom really 'holds me back' is that it's raised my expectations of the complexity I'm capable of handling, so I try to come up with TOTALLY ORIGINAL AND FULLY REALISED SETTINGS WITH A MILLION MOVING PARTS because my prose is up to conveying that, then I get surprised when it doesn't 'go anywhere'. But I don't care because I would rather shoot myself than be a 'professional writer'.
