It's hard to get them thin enough I guess? Without them falling apart all over the place

Also I don't really have a lot of cookware that's conducive to making crepes in the first place (it's kinda hard to do it in a regular skillet, it's hard to flip it over)

I see what you mean! I usually wave my pan around until the dough is spread all over the surface, but to flip them, it's really easier to get to the edges of the crepes with a flat-edged skillet.

They're much, much easier to flip in smaller sizes though, there are some appliances that allow you to cook up to 6 tiny crepes at the same time and they're ridiculously easy to flip. They're not quite like regular-sized crepes, but you can eat more in one sitting and vary the fillings!
