sorry, anon butting in--ooh, speaking of one pan, I've got a kind of interesting crustless quiche recipe. It's not as fancy as a real quiche, but not having a crust means it goes together faster, and it's pretty easy to fiddle with the recipe and still have something edible.

Preheat oven to 350 degrees F.

Lenore's lazy quiche:

3 eggs
1 cup milk
2 tbs. olive oil
1 cup grated or crumbled cheese, whatever sort you like. I've used feta, cheddar, parmesan, even cottage cheese. Hell, I've used a mix of whatever tail-ends languished in the fridge.
1 1/4 cups flour
1 tsp. baking powder.
1 tsp salt--more or less, depending on the sort of cheese you use.
1 chopped onion.
1-2 cloves minced garlic.
a cup or two whatever vegetables you think taste good with the cheese you used. I like sweet bell peppers, broccoli, artichoke hearts, or chopped spinach, but this recipe's pretty forgiving on that front. If it's something especially watery, like tomatoes, put them in a colander to drain or add a tablespoon or two more flour.
a couple tablespoons of chopped herbs if you like--again, whatever you think works.
cayenne or other hot pepper, if you like spicy stuff. I've apparently burnt away my tastebuds so I add lots.

Mix the wet ingredients together, mix the dry ingredients together, mix them both together, add the veggies, and dump the mixture into two pie plates/tins. Bake for 30-45 minutes until the quiches are starting to brown on the edges and just set in the middle. Take them out and let them cool a bit before digging in.

You can make the quiche base with everything but herbs and veggies and add different vegetables to two pie tins and pour the quiche goop over, so you have two flavors of quiche. You could probably add some diced cooked meat like bacon or ham or whatever--I'm vegetarian, but there are classic quiche recipes that contain meat, so maybe look at them for ideas.

Nice! I just buy a frozen/refrigerated crust, frankly. Making pie crust is a pain and i hate it, anyway, and rarely eat it, so pre-made works for me. I'll have to give 'crustless' a try - that will be better!
