Coffee in the morning, sometimes another cup later in the day (or several more cups; this depends on circumstances). Water for most meals, and between meals. Tea in the evening.

If you want to drink something healthy that isn't water, I'd recommend rooibos. It's supposed to be healthy, it's a great alternative to tea (especially if you're trying to cut down on caffeine, since it doesn't contain any), and if you find the taste of plain rooibos there are lots of flavored brands.
