What puts the whole "Jon was just sheltered" notion to the lie, though, is that we get chapters from Sam's POV, and he doesn't mention or notice anything, either.

Um, Sam is even more sheltered. Jon was only raised like a lordling, Sam *is* a pampered little fat lordling, who was raised by a father obsessed with masculinity. As far as I recall he was either pleasantly eating cakes and singing with his little sisters or being bathed in boar blood and chained in the dungeons by his father - there were no room for "some guys commit sexual abuse against members of their own sex and here's how you recognize this" lesson in his education.

What I meant is that Sam never sees it at The Wall. Whether or not he was sheltered beforehand was irrelevant - it makes the "Jon doesn't see it because he's never attacked because he's a lord's steward there and has a direwolf" point moot, because Sam has neither of those things, and he never encounters it in his POV chapters at The Wall either.
