Blue Cheese

Okay, so a few weeks ago, I bought a bottle of blue cheese, to go with the wings I was going to make myself for the first time... the wings went great. The blue chese was horrible. And it was the same brand my favorite pizza and wing restaurant uses!

So obviously, they make the stuff that goes into the restaurants different then the stuff that is in the salad dressing bottle. The Former is a lot more mild. I'm wondering if anybody in the know can tell me what the actual difference is

(and yes, I'm going to go ask that restaurant, but can't do that for a while so figured I'd tap into the misc. knowledge bank here)

I'm not sure exactly what's going on - I assume from the mention of bottles that you're talking about blue cheese dressing and not actual blue cheese. Assuming that's the case, I'd be willing to bet that the restaurant probably gets the same blue cheese dressing but cuts it with something (probably additional mayonnaise or something). But I couldn't say for sure.

Kraft has the exact same recipe for home and commercial/industrial distribution. I don't know with any certainty about other brands, but I've always been under the impression that's an industrywide practice.

Ken's steakhouse was the brand I was thinking of specifically, but there's been other restaurants when it came in a clear cup that tasted similar. But still different from the stuff in the bottle.

I don't know, I find stuff does taste different depending on where I eat and who makes it for me. It's science. Or maybe I'm crazy, take your pick.

Yes I'm sure it wasn't expired. it was fresh out of the store, I checke the date and eveyrthing.

It didn't taste rotten, just... strong. Much stronger then the stuff at the the restaurant.

Hmm. I think I'm going to agree with the person upthread who suggested that the restaurant cuts it with something. Seems that's the most likely explanation.
