For Ocarina, male. (For Brawl/Twilight Princess, female, but still a separate character.) Just - if you do make them separate characters, considering that the official art looks masculine and Sheik presents as male and is referred to by male pronouns, it makes more sense for me. (When I do write Zelda as Sheik, I usually have her physically transformed into a male body, too, since just... they have very different bodies, so there has to be some transformation going on anyway...)
