Weasleys being all orange and Malfoys blond were some examples, and people who marries into the families, like Molly and Narcissa, will "gain" the dominant traits even if their original looks are vastly different.
If Molly became Malfoy blond in that fic, it would mean she became a Malfoy. Gasp! Infidelity! Drama! This isn't that fic though.)
