i'm pretty sure that the reason it was called unfilmable was just because it was such a huge, sprawling story, since there's nothing in the book that would necessitate people playing other races (the only really strongly implied specific reincarnation, as opposed to just a general recurrence of roles in the story, in the book were the characters with the birthmarks, and except for halle berry being both luisa rey and meronym, they were all played by different people in the movie anyway)
