Damon didn't pursue Elena for years as a nice guy until she said yes. He's actually very far from a nice guy AND he fell for her but stayed away for quite some time. Plus they're not the main characters, it's Elena as main and then the Salvatore brothers as #2 together.

Eric/Sookie... ok, he is pursuing her but again, not as the Nice Guy, not at all.

As for Buffy/Spike he didn't develop romantic feelings for her until after they started having sex. Also, again, not a Nice Guy type. It does have some elements of pursuit but it doesn't work for what the OP talks about, imo.
