I was always more into Legolas/Gimli and the canon pairings than Merry/Pippin so I'm afraid I don't have any recs, but maybe you aren't looking in the right places? Since google is a thing that exists that's not likely though...

Honestly, I don't remember too many AU's in the LOTR fandom. Maybe there were plenty but I never payed them much mind. I think AU's are far more popular today than when the LOTR movies first came out. Not sure what kind of luck you'll have but maybe you should look for a fic reccing comm.
