Yes, that's exactly what I'm looking for; sorry if I wasn't clear!

Things where a work of fiction references either the idea of fandom (i.e Ben on Parks and Rec talking about writing Star Trek fanfiction) or their own fandom (i.e. on Castle when they specifically use the term 'Caskett')

Is Caskett referencing the show's fandom though? For most people that portmanteau name thing is more associasted with celebs, like Brangelina, rather than to shipping in the fandom sense. But I'm not really familiar with Castle, so maybe there is something about it that makes it specifically fandomy?

The way they said it in the show felt like a reference to the fandom; through it he's going through portmanteau names and then settles on "Caskett." It is pretty universally used in fandom and the writers/cast know that that's the name. It's not quite as explicitly about fandom, but it really felt that way on the show.

Castle fandom refers to Castle/Beckett as Caskett (and Esplanie and Rysposito for Esposito/Lanie and Ryan/Esposito). It was only after fandom started doing it that the characters (Well, mostly just Castle) latched onto Csakett and Esplanie.
