You're comparing two different situations.

Sophie's not discussing her character's future that she doesn't know, she's discussing her character's preexisting development and relationships. Something that most actors get into to prepare for the role.

Esme Bianco hoping that her character would have a longer run is not the same thing.

It is still just an interpretation. Unless she is getting extra script notes re:their relationship, which I imagine would become pretty quickly publicly known, she is still just playing her interpretation of the character. Which is not wrong. But it is also not the only correct one.
