I hate when people do this with Mass Effect.

"Well what if I just sneak in my personal Shepard's name and-"
often leads to
"Well what if I just sneak in my personal headcanons about how my Shepard reacts to their family, and the Earth cuisines they like, and their hobbies, and their religion, and-"

Shepard should be presented the way Shepard is in the Mass Effect canon.
Leave your self-insertion at the door.

Shepard's personality is fluid, because s/he IS a self insert though.

Shepard is a self-insert to an extent.
But they still have an established character, based on the options that the developers give the player.

Something that completely comes out of left field and is quite obviously written to fit the author's interests stops being "Shepard" and starts being the author.
They might as well just overthrow Shepard and make themselves commander of the Normandy.
But of course, then they wouldn't have the whole "Shepard can be me! Even if Shepard has never been shown praying to a cross or speaking in a Southern accent before! NOT A MARY SUE! IS CANON!!" excuse to hide behind.

Ah yeah. I get that there's a line, but I don't really have a problem with personal canon as long as they get the baseline right. I just feel like a lot of people argue the "that's your OC not Shep/Hawke/whoever" because they have their own idea of the char rather than it being wildly off base.

I've noticed that there's often no way to have Shepard say exactly what I would say in a given situation, so I don't think of him as a stand-in per se--he's moldable, but not infinitely so. (For instance, he tends not to be very tactful--either he agrees with a statement, or he flatly repudiates it. He's also generally very "military", which makes sense given who he starts out working for.)
