Ice Cream Emergency!

[personal profile] nonnymouse 2013-05-28 11:23 pm (UTC)(link)
I have a favorite recipe for homemade ice cream, and I very much want to make it (like OMG RITE NAO!).

But when I took out my ingredients, I discovered that I had bought heavy whipping cream instead of just whipping cream like the recipe says. (The other 'milk' component is regular whole-fat milk.)

Would it make a difference to use it? Can I salvage this without a trip to the store?

AAIIIIIEEEE YOUR ICON. <3

I mean, ahem, I think you'll be just fine? I think at the most, your ice cream might be a little...collapsed-y and unfluffy, kind of like when it melts and then you refreeze it.

Ditto on the icon! Adorable.

also, can you lessen the amount of cream just a little and replace it with the milk? Say, 1/4 cup substitution? That might be enough to balance it out. I'm pretty sure it will still freeze. It may be a little odd but go for it and report back?

I've never seen un-whipped whipping cream that wasn't labeled "heavy whipping cream" so it is probably all the same thing.

Heavy whipping cream is whipping cream, it's light whipping cream that's been adjusted. Light whipping cream doesn't work well for ice cream, so you've got the perfect stuff on hand already.

is it definitely heavy whipping cream, or just heavy cream?

I've always been under the impression that heavy cream = whipping cream = heavy whipping cream. At least in the US.

Carton definitely says "heavy whipping cream". Also, I've accidentally bought it before instead of regular whipping cream (for my coffee), and it's thicker and coated the inside of my mouth when I used it.

ETA: This is the recipe I use. She says it's adapted from the Ben & Jerry's recipe book.

in that case, there will definitely be more fat in than plain whipping cream (regular can't have over 36%, heavy must have at least 36%), but I assume it would simply affect the texture of the ice cream rather than the flavour. so the ice cream will probably be a little heavier of an eat, but it should still be okay to the best of my knowledge. I haven't ever tried this myself so I can't say for sure, but I think you'll be fine with what you have.

Um, but it says heavy cream? Which is the exact same thing as whipping cream. Which is the exact same as heavy whipping cream.

/facepalm /d'oh

Okay. I must've copied it down wrong when I wrote it in my recipe book.

I could've sworn that "heavy whipping cream" and "whipping cream" were interchangeable terms. In any case, I've always used heavy whipping cream for my ice-cream-making needs, and it's always turned out delicious.

They're not the same but you actually want heavy whipping cream for ice cream.

That honestly just sounds delicious. But then again, I like my ice cream as close to being gelato as possible.
