I still haven't started DW. I'm interested, but the fact that there's how many seasons is daunting to me.

Don't count the classic series -- not because there's anything wrong with it, but because some of it doesn't physically exist anymore, so therefore you're not required to watch it all (since it's literally impossible). The new series (beginning with the Ninth Doctor) is a good starting point, after which you can dip back into the classic series and watch whatever sounds interesting.
