You need to go to Documents/EA Games/The Sims 2. Only some of the folders need to be backed up, but if you want to be safe and not risk leaving out an important one, you should just copy the whole "The Sims 2" folder and paste it somewhere else (the desktop, a flash drive, an external hard drive, whatever you want).
You should replace this backup with a newer version as often as possible. I'd advise you to do it whenever you make a lot of progress with your Sims (and "a lot" is relative... really, just whenever you do new stuff with your Sims that you'd be really upset to lose) or before you do something very game-altering like adding another expansion pack or downloading a hack.
