I wonder how the food consultant knows enough about human flesh to do that.

There's only so many variations of meat on this planet. Figure out what human meat mimics which all you have to in order to do that is call up a surgeon or a med student. Like is it more like beef or is it more like pork or fish? From there, you have your base so everything else should fall into place.

from my understanding, human flesh is most similar to pork in consistency and tenderness (I swear I just like writing about cannibals)
