I don't think it matters which fandom has the 'older, more mature' group because one is a canon pairing and the other is not. It makes a difference. Any fic writer worth her salt will know what she's starting out with and either respect the tone of canon or not, depending on the goal. Sometimes you want to explore the hidden darkness in the supposedly ideal romance. Other times you want some sugar to cut the canonical doom and gloom. It might look like badfic to you, and a lot of it probably is genuinely shallow, but fanfic doesn't change the canon in the end.
