Because we see, in the very first episode, that he took advantage of a serial killer to kill a girl and eat her lungs. He's entered the cultural consciousness as a cruel but intelligent serial killer and cannibal. Rosebud was his sled. Darth Vader was Luke's father. Soylent Green is people (incidentally, so is everything Hannibal eats). At this point, even if you've never read the books or seen the movies you probably know about the character's dark side. So why are people convinced he's a woobie?

not that watching Hannibal because you think Lecter's a woobie is a better reason to watch than because you think Hugh Dancy is cute...

My theory? The people who think of him as a woobie are not familiar with the genre that Hannibal sits squarely in. (I know there are quite a few fans who came to the show not because of the premise but because it's a Fuller show and they were big Pushing Daisies fans.) So, not being familiar with the psycho/slasher genre, they aren't familiar with how psychopaths work. They can't wrap their heads that Hannibal can not empathize with anyone or anything. That he is physically incapable to do so. (That part of his brain just doesn't light up.) Furthermore, most of these fans are probably also Sherlock fans. And they've seen Sherlock mislabeled as being a sociopath. So, since Sherlock can show emotion, such as concern for Watson and Mrs. Hudson, they probably think why can't Hannibal do the same? But, again, Sherlock was mislabeled while Hannibal, on the other hand, is the real McCoy. But the doesn't stop people from expect Hannibal to act like the "sociopath" that Sherlock has been described to be.

This is probably part of it, but the same thing happens in the genre itself. Stories that focus intensely on an unforgivable character inevitably find ways to forgive them, because that's how you keep people reading. The same thing has happened with Dexter, and is happening again in Bates Motel. It might be partly a more modern trend, but it's absolutely present in more than just people's own little fantasies. Vampires aren't the only villains that modern media's repainted with a fresh coat of sexy angst.

same here! I'm not ashamed. I ended up loving the show but Hugh is still my favourite part.

A lot of fans of this show haven't seen this movie, I've noticed. Or read any of the books. This doesn't make him a woobie by any means, but it definitely is something that makes his character sympathetic.
