I'm pretty neutral on the show itself; I think the fandom's reaction to this would be way more entertaining on a much more epic scale tho.

I think it's already being done, tbh. But unfortunately for those hoping for a wank explosion, the fandom is capable of following the advice that goes, Don't Like, Don't Read. Plus, any parts that aren't are capable of writing the counternarrative where Lecter kills Sherlock, the Winchesters, the Criminal Minds team, and all the others, and then turns out to be immune to the Spanish flu. So why pick the fight? It'll only end in either yawns or stalemate.

Objectively speaking, I think his chances are good against any human investigators not being backed by their own protagonist-narrative, so they'd have to meet him in their own show to have the advantage. He's supposed to be one of the best, after all. But he wouldn't realistically have much of a chance against dragons, Daleks, archangels, or a very hungry rugaru. (Because bringing in magic/sci-fi/horror against a nominally realistic show is cheating. I don't care.)

...But I agree the Hannibal fandom probably wouldn't really care about such crossovers and wouldn't bother melting down. The crossovers would just make ME happy.

There's something about active distaste/hatred of subjective material that is just so much more pathetic than enjoyment or love.

Perhaps it's the nature of the choice involved. If you dislike a piece of meaningless entertainment, then the logical thing to do is not watch or read it again and to excise it from your life. But people like you don't excise it from your lives. You take some sort of perverse pleasure from nurturing a pointless hatred of and bitterness toward it and bothering people about it. It's like you're so simple-minded that you can't take the fact that there are things in the world that you don't like, and so you have to vomit your vapid objections over everything and everyone.

Don't be silly. Look, there will always be tropes or characters we don't like, and how we chose to deal with this frustration isn't really an indicator of any mental state other than "I'm frustrated."

For one, I don't believe entertainment is meaningless. If it were there wouldn't be communities formed around particular shows and genres as a whole. It's a vehicle for human communication, like everything else. I happen to dislike one aspect of this experience and my expressing it doesn't indicate any simple-mindedness or obsession about it. You've read ONE comment of mine on this subject and immediately assumed I hate-watch this show even though I don't and tumblr saviored the shit out of it. Here I'm just letting off steam. OP posted a secret in a pan-fandom community, they aren't specifically bothering anyone, and then like-minded people answered. By the point they suggested that Hannibal catches the Spanish Flu from some other character, it was pretty clear to me they aren't really losing sleep over this, just making light out of something they dislike. You are the one who got defensive over someone disliking something you like.

Nope, don't like it. Or, I should say, I don't know if I like it -- haven't watched it.

So, no, "defensive over someone disliking something [I] like" is not the motivating factor. But it's fun to lead people who get mad over assumptions to make that assumption themselves.
