My god, we'd love to, but for some reason, I'm not sure the police are really going to take seriously some 20-something-year-old's problem with their overbearing bitchcake of a mother.

You could always go in and ask, lay out some specific examples of the more unacceptable things she's done. If they refuse, no one gets hurt.

Cut off communication with her until she again calls the police on you. When they show up, tell them she's stalking/harassing you guys and that you'd like to know what your options are for keeping her at a distance. An extreme attempt at solution, maybe, but this way you'd likely have the cops on your side from the get-go.

You're (presumably) both over the age of majority, both living independently...the cops should have a record of the mother's complaint (bonus points if they were good cops and filed HER complaint under "nuisance"), you should have all the dox and ammo you need. Talk to a lawyer (you can get free legal advice from any (good) lawyer in the phone book for, I think it's a 1/2 hour) if you're unsure.
