Apart from what others have already suggested, try figuring out stuff she doesn't like and/or can't be around. Particular scents, for example, dogs, rap music, anything you guys are able to tolerate but that causes her a real problem. Then put a lot of it in your house and break it out the minute she shows up.

Depending on your phone service, it might be possible to set your phone lines up to block specific callers and possibly even to play a recorded message informing the caller of this fact. Your partner may also want to consider setting up an alternative online presence that mom-in-law doesn't know about.
