Hopkins!Hannibal was more like BBC!Moriarty. The creepiness came from seeing a playful character with a thin veneer of sanity that blinks in and out, and knowing that he could easily kill you painfully if he suddenly decided to (and that nothing would stop him if he did). Mikkelsen!Hannibal is more like book!Hannibal; the mask of sanity (that the audience only is aware he wears) doesn't look like it'll slip at any moment, so viewers relax a bit more and deem him not scary (which I guess is why so many people woobify Mikkelsen!Hannibal).

which is why it's so amazing when he does something absolutely off-the-rails insane.. he's lulled you into thinking he's not really all that bad, despite all the people-eating ;)

I saw a gifset of him strangling a woman in a suit with a ponytail and I actually screamed. Mostly because I was on a corgi-reblogging spree, but also because his face doesn't change at all.

yeah his facial expressions are on point when it comes to him being a complete psychopath (=possessing no true empathy). Even when he's "sad" you can *see* him thinking so carefully about how to wear his sad mask while people are looking at him.

Yes. Because you can practically see the wheels spinning in his head. Of him plotting whether or not to murder or just jack up poor Will to kingdom come. It's so damn subtle.

It's also the moment his mask drops. And I might be wrong, but that also might be the first time we've ever seen the transition between personas.

YES. And I love that they're showing us put on and take off his "person suit", so the viewer has more moments of "wow this guy really has NO EMPATHY" than we did at the start. Ugh the subtlety of this show makes my mouth water.

This is a weak comparison. BBC!Moriarty is hammy, cheesy acting at its very worst/best.

... yeah. I know that's the BBC Sherlock fandom explanation for why Moriarty isn't an embarrassingly hammy doofus. I'm willing to concede that's what they might've been aiming for, but I'm not convinced they succeeded.
